You get a tender filet mignon and a beefy strip steak both nestled up to a beef bone in the shape of a "T". This bone provides insulation while cooking, which allows the steak to retain moisture and juiciness. Just note that bone-in does require more culinary skill for the perfect doneness because the meat closest to the bone will cook slower than the meat farthest from the bone.
