Why bone-in? Typically you'll find this steak offered as boneless, which is just as great of a choice, but what the bone provides is insulation while cooking, which allows the steak to retain moisture and juiciness. Bone-in does requires more culinary skill for the perfect doneness because the meat closest to the bone will cook slower than the meat farthest from the bone.
