Our Dry Aged Bone-in New York Strip Steaks are dry aged for 30+ days in our humidity controlled dry age room. The process of dry aging breaks down the fat and muscle and creates a more rich, earthy flavor and buttery texture of the meat. Dry aged meats do cook faster than fresh or wet aged product so this will need to be considered when cooking.
