A steak you don't see very often, the Kings Rib is the 13th rib harvested from the short loin. This is a special steak because it is a New York Strip Steak with a frenched-out rib bone that is tied back onto the muscle to look like a mock ribeye.
As the story tells it, this cut used to be for the King because it came directly from the middle of the cow....so we guess that must have signified something of importance? Either way, this is a unique steak worth trying!
